I'd argue one of the biggest reasons that UX is lacking is that they are trying to support ALL the platforms (including blackberries, windows).

If they focused 100% on iphone / android, I'm sure they could achieve a better UX and performance.

Just look at zepto.js thats 100% focused on mobile safari vs jquery.
