I think it's typical Apple, but forcing the users to upgrade just because they want to use the AirPods is next level. Due to lag issues on Big Sur, I downgraded to El Capitan on my MBP 2015. But now Apple won't let me use the AirPods!
You should still be able to connect to them by clicking the button and pair like any other bluetooth headset. You may lose some features but that is expected for a non updated software and OS.
