But I remember, that I had read a similar story, a week, or two, ago and the topic was, that the police found out about the killer in a murder case, by listening to Echo recordings from the kitchen. I doubt, that this would be possible, if there is no constant stream of data on Amazon's servers.

That gave me the impression, that they store it all. At least for a while.
