I think you can start in a lean way and build a landing page for your SaaS idea as if it is an actual product and start to post it to some websites that features beta or demo apps like... betalist.com... for example and may be drive some targeted traffic by paid Google or Facebook ads.
As far as I know (feel free to correct me) it is just a library, not a service. It is better to compare it with Payum library.
It is not end solution. It does not provide API, backend UI, integration with a storage. It takes a bit more time to setup it. Plus, you have to be a developer (preferably Ruby one) to use it.
PayumServer requires as few programming knowledge as possible. You can use it with any of your app, written on whatever language you like.

You can check your logs within the app and not only in the console. Also it's universal which means that you can view also all the other requests that performed without AFNetworking
