This seems incredibly marginal relative to the choice to grow lettuce in a desert.

I actually heard a podcast once, and they asked a similar question. "Why does it make sense to grow alfalfa in the desert?"

The answer was surprising at first, but not really:

- You can grow a lot of it because there's a lot of sun

- You can get 8 or so harvests when in a normal climate you might get two

- There are no bugs in the desert that will eat your lettuce

Yes, it makes sense in terms of output IF you can sustain the water inputs. But the water inputs aren’t sustainable. Cutting back on that sort of farming in the region would make a much greater impact than fractions of percentages from digitizing infrastructure.
